From 23 May to 13 June 2026, Vivid Dining returns with an immersive culinary experience that captures the energy and creativity of Sydney's iconic winter festival. Set against uninterrupted views of the Sydney Opera House illuminated in colour, Park Hyatt Sydney offers a sensory journey where light and flavour converge.
At the heart of the experience is The Dining Room by James Viles, where guests can enjoy a special three-course seasonal menu ($120 per person) celebrating the richness of winter produce through bold and expressive flavours.
Led by Chef de Cuisine Dan Parkes, this year's menu draws inspiration directly from the annual Vivid Sydney's vibrant atmosphere. “Vivid is always a moment we look forward to,” says Parkes. “It's a chance to let the energy of the city influence what we put on the plate, bringing creativity, colour and a sense of theatre to every dish.”
Showcasing both precision and creativity, the menu features dishes such as raw tuna with beetroot, buttermilk and dill, a delicate yet vibrant entrée, alongside the chicken and duck press with tarragon and black garlic, offering depth and richness. Mains continue with the O'Connor striploin paired with broccoli and Szechuan peppers, while the calamari rigatoni with green sauce and preserved lemon brings a bright palate. For those seeking a plant-forward option, the BBQ leek with confit onion, spinach and seaweed delivers surprising complexity and umami.
Desserts echo the festival's luminous energy, with creations such as Bright Lights, a vibrant interplay of matcha, yuzu cheesecake and passionfruit while Afterglow combines chocolate, pear and hazelnut that is designed to conclude the evening on a radiant note.
To complement the experience, a selection of Vivid-inspired beverages adds a final flourish. Signature cocktails such as Beyond The Glow ($25) blends Papa Salt Coastal Gin with yuzu and lemon myrtle, and the non-alcoholic Golden Glow ($20), layered with honey, citrus and native botanicals. Both mirror the movement and colour of the harbour at night.
Beyond The Dining Room, The Living Room offers a more relaxed yet equally indulgent experience, ideal for guests exploring the light trail before or after dinner. Guests can enjoy elevated comfort dishes including squid ink spaghetti with prawn, lemon and tarragon ($52), 'nduja rigatoni with stracciatella ($42), and a decadent truffle mac & cheese ($56), the full à la carte menu will also remain available.
