Hamilton Island Unveils First Look Menu at Josh and Julie Niland's Catseye Pool Club

The Sundays, Hamilton Island's exciting new boutique hotel opening 24 April 2025, introduces Catseye Pool Club, the hotel's dining destination by Josh and Julie Niland.   

At the heart of The Sundays, Catseye Pool Club has been designed for long, sun-soaked meals by the water, celebrating island-style dining. The restaurant's pool club energy captures those endless Sundays spent with friends and family. Guests will dine poolside against the breathtaking backdrop of Catseye Bay, where the Whitsundays' endless blue ocean meets powdery sands, swaying palms and breathtaking sunsets. 

The restaurant menu is designed to be shared, bringing people together with dishes celebrating the best Australian ingredients at their peak, all in a relaxed waterside setting. Explains Josh, "Whilst 'family style' or 'share style' dining is very much a way restaurants have operated for many years, the Catseye Pool Club approaches its menu with each item very much designed to be enjoyed as a whole table, with all the trimmings coming with each dish.”

While Australian ingredients take centre stage, and considering the ocean front location Josh's whole fish cookery will feature, the Catseye Pool Club will not be a seafood restaurant. The broad and generous menu will evoke the abundance of ingredients enjoyed in a summer lunch or dinner with family and friends.

The restaurant will also offer an exclusive breakfast just for hotel guests. "The menu is still undergoing final deliberation" explains Josh, "but guests can expect beautiful fresh pastries made by the team, ‘CPC’ Spanner Crab Royale, and Coconut & Verjuice Honey Bircher."  

Beyond the menu, Catseye Pool Club embodies the ethos of The Sundays —a place for relaxation and reconnection. "It's about creating an atmosphere where everyone can detach, unplug, and simply enjoy being together" says Josh. "We will also extend our hospitality offering to the guest's pool and sun loungers, with a Queensland ingredient-focused cocktail menu curated by Sam Cocks, the Saint Peter Bar Director."

With turquoise waters and the Whitsunday Islands as its backdrop, Catseye Pool Club invites guests to linger over meals that capture the essence of an endless Sunday.

The opening of Catseye Pool Club on Hamilton Island follows The Palms, the island's new garden bar, and the relaunch of coca chu, the island's much-loved Southeast Asian restaurant – cementing Hamilton Island as one of Australia's most exciting food and wine destinations.
